Normal meeting requests change to reoccuring meetings

Hi Everyone

I have a user who is running Outlook 2007 SP1 (As I am)
He receives a normal meeting request (I.e Monday 13th from 2pm to 3pm)
After he accepts it and looks at the request in his calendar it reflects as
a re-occuring meeting (Every Monday from 2pm to 3pm)
If he forwards me the same request it goes into my diary correctly.
This is happening with all his meeting requests.

Has anyone seen this before - does anyone have any ideas what I could check.
The back end it Exchange 2003 SP1
