Word has no provision for enforcing a particular end-of-sentence spacing,
but you can set the grammar checker to mark either one or two as incorrect.
The problem with spaces wrapping, however, can be corrected by clearing the
check box for "Wrap trailing spaces to the next line" in Tools | Options |
Compatibility. If your Compatibility setting is anything other than the
current version of Word, you may want to change it.

How do you set the number of spaces after a period? Some of my documents
want one space and others two. I prefer two. If I put two spaces at the end
of a sentance that ends on a line, the next line has a space at the
begining.
