If you can afford it, I suggest XP PRO for the client PCs and
WinServer 2003 for the domain server. And, you should get the
educational discount.

To save $s, you could run W9x (Win98SE seems best) on all clients
and "servers", as one large workgroup. Less reliable, for sure, so
you'll spend more time managing it.
