When I go to Start - where the ALL Programs are - there are icons above
pointing to the most recent places i.e.notebook - outlook express. How do I
stop this program from collecting the sites and just use the ones I want??

Right click any entry you don't want to be there and select "Remove from
This List".

If you are referring to the list of entries immediately above the 'All
Programs' title in the start menu then...
Right click on the Start Menu button, select 'Properties' from the list of
options.
Next in the 'Taskbar and Start Menu' window click on the 'Start Menu' tab.
You should now see a 'Customize' button, click on this button.
Next in the 'Customize Start Menu' window locate the 'Programs' box, here
you will find a option to specify the 'Number of programs on Start menu',
set the value to Zero. Click 'OK' to exit out.

Almost forgot, the programs you wish to keep.
Highlight a program and drag it straight up to a point just above the thin
dividing line at the top of the list and into the area just below your
account name. Now you have what you need and no more recent entries will
appear.
