I understand I can use Net User command to limit the times that users can
logon to a computer. But I'm having trouble figuring out the abbreviations
for Thursday, Sat and Sunday.

Please advise.

Thursday = Th
Saturday = Sa

Here's a generic example with an account called blah:

net user blah /time:M-Th,7am-11pm;F,7am-7pm;Sa,7am-6pm;Su,11am-6pm
