TiMidity is a MIDI to WAVE converter and player that uses Gravis
Ultrasound(*)-compatible patch files to generate digital audio data
from general MIDI files. The audio data can be played through any sound
device or stored on disk. On a fast machine, music can be played in
real time. TiMidity runs under Linux, FreeBSD, HP-UX, SunOS, and Win32,
and porting to other systems with gcc should be easy.

The best program I have found is itunes. It is rather large and
cumbersome but it will convert midi or kar files to wav or mp3 and also burn
them onto a cd if desired. I also have been looking for a small program to
do the trick and haven't had any luck. Hope this helps.

i think the latest iTunes (v. 6) will no longer convert midi to wav or mp3
unless you get Quicktime pro ($$)
but iTunes v.4 will convert

I haven't updated since it was installed some time back so I can't say on
v.6
