My email signature & new text reverts to Helvetica 10 Ivory color

Each time I compose a new email message, my email signature does not appear
and as I start typing text, it does not appear either. Somehow - the format
to both reverts to Helvetica 10 pt and Ivory color. If I go to my email
signature, all is fine. Also, the line spacing reverts to double. How can I
get it to stop??
