My e-mail signature font colour is not the one chosen. Fix pls?

How can i ensure that the font colour of my signature is that which i have
chosen? It keeps coming up in yellow rather than the black that i chose.

On a separate note how can i stop outlook changing my font colour each time
in an e-mail reply or e-mail conversation?

All depends on you configuration -version of Outlook, type of e-mail editor,
message format- which you did not specify.
