Where can I read up on how to get these two to work together?

I've been asked to produce a room booking and billing system for a
clinic and it occurs to me that since I know they've got Office 2000
Professional Edition (and would be prepared to upgrade to XP if
necessary) I should in theory be able to keep patient contact details in
Outlook and make the bookings there, as appointments, and handle the
treatment records and billing details in Access.

However, while I know how to link and import tables from Outlook I'm a
bit stuck on what to do next. For example, I've just successfully
imported my Diary from Outlook into Access but while that gives me
details of all my appointments and when I made them, it doesn't tell me
when I made them for.

Can anyone help with this?
