Is there a way to change what appears in the list of
choices when you right click on a file in Windows
explorer? I am using Windows XP.

Ian,

What's the filetype?

The context-menu entries are stored in the registry, varies for each filetype.

Example:
HKEY_CLASSES_ROOT\<ProgID>\shellex
