The IP address would be the one reported by your outbound e-mail server.
Talk to them about how to hide yourself (assuming they have any interest
whatsoever in operating an anonymous e-mail service). But then they can
do nothing about hiding their server's IP address because every host
knows the IP address of whatever other host connects to it; otherwise,
TCP networking wouldn't work.
So how do you figure that your IP address identifies yourself at all to
anyone that sees it? Are you planning on committing crimes which would
result in the authorities issuing a subpoena against your e-mail
provider to get at their logs?
