W98 had the great feature of being able to right-click on
an empty spot on the toolbar, and then hit "minimize all
windows." I just changed to XP and don't see that
feature. How can it be added?

You can use alternate options such Windows key + D, and since Windows Groups
windows, when many Windows of same application are open you can individually
minimize the group.

Are you talking about the "Show Desktop" icon/feature? It's still there
on XP. If you don't have it on your toolbar, try enabling Quick Launch.
Otherwise:

Restore "Show Desktop" from Rick Rogers:

Copy/paste the below into notepad, then click file/"save as" and call it
"show desktop.scf" and drop it on the desktop. You can drag it from
there to the quicklaunch bar.

[Shell]
Command=2
IconFile=EXPLORER.EXE,3
[Taskbar]
Command=ToggleDesktop
