How do you stop addresses being added automatically to your address
book every time you reply to a message or get a new email. I know that
in express you can go to tools/options/send tab but I can't seem to
find out how to do it in just OUTLOOK.

In Outlook 2000 (it's probably similar in other versions) go to
Tools | Options, and on the "Preferences" tab, click "E-mail
options." The option is on the bottom of the dialog box.
