If you cannot delete the Exchange Server service from your existing profile,
you need to create a whole new profile that only contains the POP3/SMTP (or
IMAP) service, 'Control Panel|Mail|Show Profiles|Add'. Once you've created
this new profile, click the existing profile (which has the Exchange Server
service that you can't delete), and click the "Remove" button. This will
delete the Exchange Server service by removing the profile that contains it.
