I have a few questions, but will post them individually, apologies. First
one in BCM how do I prevent other people making any changes to the
user-defined fields, but so that they can still see them?

Only the database owner can change user-field definitions, anyone can
change the data in any field.

If you need fine grained rules and permissions, you'll need to upgrade
to a more powerful CRM package.
