I'm italian, I don't speak English very well.
So, one question : are there compatibility problem with
Microsoft Antispyware and Symantec Internet Security 2005?

Hi Rocco,

There is not a definitive answer for that question, BUT, in my opinion,
NIS or NSW 2005 will cause issues on a system with MSAS installed.
Remember, this is just an opinion until further reports can be fully
documented and does not represent Microsoft's views.

I'm running
Windows 2000 Pro
Norton Antivirus 2005
MS-AntiSpy Beta

All are playing well with each other so far :)

Which is the better method to follow for total uninstall
of MSAS?
I would like it totally removed from registry and avoid
any issue with NIS.

I would recommend simply removing it via add or remove programs. There will
be remnants left in the registry. I don't believe they will cause any
compatibility or performance issues.
