I was sending some documents with graphics, and when I got up this morning
they still were sitting in the outbox. I have OL 2007.I have a 64-bit system.
Is this a problem?

I would guess that it's probably a problem if you want them to actually
leave the mailbox and go to the intended recipient.

How large are the emails? Are there any error messages?

Assuming you have send immediately enabled or are sending every xx minutes
and are connected to the internet... any error message in the send/receive
progress dialog?

Two common causes are a message larger than the mail server allows or a
virus scanner scanning outbound mail.

See http://www.slipstick.com/problems/nosend.htm for other causes.
