How do I mark all my open mail as unread - without going to each one and
marking it (as I have opened them throughout the day but still need to know
which ones I still have to deal with tomorrow when I reopen Outlook - they
are in no particular order and therefore when I look at the list of e-mails I
don't really know which ones are the open ones)

You can just highlight all your mails or a selection and right click and
select 'Mark as unread'.

I find 'Mark as unread' insufficiently reliable for the purpose. You
can accidentally 'read' something, for example, if an e-mail gets
caught by the preview pane as you scroll past it.

Why not just hit the 'Red Flag' but to flag it ? The 'Flag' icon is
visible and takes little space in a view.

So, turn off the option (or lengthen the timeout) for marking messages read
by the Preview Pane.
