I use Outlook for my e-mail. Occasionally, I use vista mail for News Groups.
When I go to MAIL there is a huge list of e-mails that I have processed over
the past time period. Why are they there? Is there a way to stop them from
appearing?

You mean, the emails are in Windows Mail, but you don't want them there?
In that case you should remove or disable the email account in Windows Mail.
