Lost my Tools>Options>Mail Format ability

Outgoing messages no longer have my signature and options to replace it have
disappeared. I am a new user and don't think I have changed anything.
 
Could you include a bit more information to work with?
Version of Outlook would be a good start.
Also, are you a home user or a corporate user?

You're saying that the tab Mail Format is completely missing when you choose
Tools-> Options in the mail Outlook window? (so not when composing a
message).
