Line spacing when copying and pasting in Outlook

When I am copying text from one Outook "area" to another
(say from an email that I've recieved in my "Inbox" to
the "notes" section of a "Contact", and I paste to the
new area, the pasted text is double-spaced, rather than
single-spaced like the source. There is no option to
paste with "source formating", nor can I find a way to
either revise the line spacing in Contacts, or change the
way my copy board handles copied text.

How can I paste and maintain single spacing?
