laptop sync/backup

I have a user with a laptop running sp2 on a windows 2003 ad network. He
takes his laptop out of the office and I want to Easily be able to
sync/backup his data when he is about to leave the network. I have easily
done this with his my documents folder but I need for at least 3 other
folders to be backup up/synched somehow. I can't redirect them because they
are tied to applications. Any thoughts or ideas?? I am drawing a blank right
now.

Task that runs when he logs into the laptop and it can contact a server that
runs something like SyncToy to update a server folder?
 
The preference would be for it to run when he logs out not logs in. Then he
data on the backup/sync location will be up to date. I need something easy
so there will not need to be manual intervention from the user.

Okay - logoff script then.
Of course - that means they'd actually have to logoff.
They may not be doing that.

Another option would be offline folders
