How can I specify a country in the Junk E-mail senders list. For instance,
if I want to eliminate everything from Italy (.it), can I specify just .it,
or is it even possible? Also, some ISPs use tempoaray ids embedded in the
domain name (i.e. (e-mail address removed)). Can I specify some sub-part of the
domain name and get rid of everything?

Put

..it

in the Junk Sender.txt file. Of course, this will also match
".italics.com", if a message with such a domain was received.

You can put

..temp.

in the Junk Senders.txt file and any domain containing that string would be
filtered.
