I have an old MS Sidewinder Force Feedback 2 (on USB2.0)
It's ok to use on FS2004, but...

No matter the aircraft there is a constant rudder/anti-torque drift of any
aircraft i fly. Is this a joystick or Game/PC problem?

Also the Z-axis is hyper sensitive, even with my in-game and
joystick-software set low as possible, i twist more than 4mm either way and
get full rudder/anti-torque. What's the deal here?
