I have a 2000 server setup with AcitveDirectory and is the
domain controler. The domain is called btzlaw.com. I
also have MS Exchange on this server and run the
btzlaw.com email.

Now my client wants to add 2 more .com's to the firm and
have email for them as well. Is this possible?

Yes,

Either you or the appropriate ISP will need to set the mx records for the
new domains to point to your mail server .

you'll also need to configure the mail server to accept the new domains.

All you have to do on Exchange 2000 side is to modify recipient policy, to
add appropriate SMTP address to your users and mark, that your server is
responsible for delivering mail for this specific SMTP domain (it is a
checkbox).
As Bill already noted, you have to set appropriate MX records on ISP side
(or whoever hosts this domains) to point to your Exchange server.
