I was running Xp on a shop bought PC. I thought i had been given the
installation disks but this was not the case. I have just bought a new
version of Xp and on installing i have now got two versions running.

Q1 - how do i get the new version running alone?
Q2 - how do i copy all my old setting across?

For Q2 you can try going to Start>All Programs>Accessories>System
Tools>Files and Settings Transfer Wizard.
For Q1 if you have both versions on the same partition check here
and scroll to #20.

Go to start
then click on all Programs
then click Accessories
then click System Tools
then click Files and Settings Transfer Wizard
then put on your pen driver
