I have an original WinXP CD and have bought a new 300Gb disk,
but this WinXP CD will not recognise this large disk to install onto.

If I get a WinXP CD with SP2 - will I be able to install from that
and register it with the license key (COA) from my original WinXP
CD ?

You need to create a "slipstreamed" installation CD.

Create a Slip Stream version of Windows XP

No, this is not likely to work unless it is the same type (retail, specific
OEM, etc).

Slipstream your CD to SP2 and do the install. Download both the full SP2
installer and Autostreamer, and it can be a quick task.

Note that some OEM versions of the XP install CDs can't be slipstreamed.

Which type of OEM install CDs? I have yet to seee a valid OEM install
CD which did not let me do a slipstream. Only CDs I've seen that will
not let us slipstream service packs are those Recovery CDs. However,
these Recovery CDs are / should not be considered as install CDs.

Dell CDs often will not slipstream. If you try, and I've tried repeatedly
with different systems and CDs, you get a message that the disc cannot be
slipstreamed because other updates have already been applied. The
actual text is:
"'This Service Pack cannot be integrated into a destination that also has
integrated Software Updates.'"

Dell already slipstreamed the CD partially, and the SP2 slipstream can't
deal with it.

Agreed, and they aren't what I'm referring to.
