Is there a way to set as a default so that pages will always be numbered?
So that if I start a new document it will show the style of page number
which I want.

Yes there is. Open your "normal" template (on Word 2007 open a Word
document, go to file/open/trusted templates/normal.dotm then press "open".)
The "normal.dotm" is what opens every time you start a new document. You can
add your page numbers now, format the style however you like, and then press
save. Next time you open a Word document, the page should have numbering.

You can use this to set up permanent tab marks, font styles & sizes - all
sorts of things!

Cheers, Megan

One caveat before you do this: If you ever use the Labels dialog, do not add
anything to the headers and footers of the Normal template. Having anything
there would throw off the alignment of the labels so they don't match the
locations on the paper.

If this is a concern, make your own (not Normal) template, put whatever you want
there, and use the File > New > Templates On My Computer dialog to make new
documents.
