In email, under "To" how do I sort by last name?

When I am creating an email, under the "To" button a list of my contacts
comes up sorted by first name first, then last name. How do I set this to
sort by last name first?

Version of Outlook? Look up 'Last Name' in Help for instructions for your
version.
