When creating a new e-mail and pressing on the address book icon that is
located next to the TO: line, is there a way to sort the entries
alphabetically by last name instead of by first name?

Always state your Outlook version when asking a question.

For Outlook 2002/2003, click Tools>Email Accounts>View or change existing
directories or address books>Next. Select the Outlook Address Book and
click Change. Select the desired sort style.

For Outlook 98/2000 CW mode, click Tools>Services. Select the Outlook
Address Book service and click Properties. Select the sort style.
