I have some emails I want to send, but not right now, I want to send them in
a weeks time, how do I do this sort of a delayed send?

Click on the Options... button when composing the email to set the "Do not
deliver before..." options.
Depending on the mail account type that you are using, Outlook must be
running at that time to process the mail.

look on the options tab when composing the message. Test it with your own
address to verify it works correctly with your version of outlook and mail
server.
