I want to change what shows in the 'From' field when I send email

When I send an email, the recipient sees my name in the 'From' field, however
I just want him to see the email address. (using XP pro and outlook03)
 
Change your mail account settings in Tools | E-mail Accounts.

I think I found the answer, open a new email, click on the options drop-down
box and uncheck "From".
