I set my tabs up and as soon as I hit Enter all of they disappear

I put each tab settings and hit "Set" after each entry and then clicked OK.
As soon as I hit enter to go to the next line, I lost all my settings.

Is the next paragraph in the same style as the previous one? For example, if
you set tabs in one of the built-in heading styles, the "Style for following
paragraph" for all those styles is Normal, so you would not see the tab
stops you set for the heading style.

If you use format > tab to configure the tab settings, that setting applies
to the current paragraph. Modify the tab settings associated with the
current style definition if you want all the paragraphs in that style to
adopt the same tab settings.
