I need help creating a document that has fields to fill in....

Hello all,
I have a large document that I have resaved as a "document template" - I
need to know how to make this so that people can only fill in specific
fields/areas and can't touch the rest of the document. How do I make the gray
boxes that people tab between and just click on and fill in? I have tried
inserting fields and highlighting them gray - but that doesnt seem right.
Help - PLEASE!!!!
