how to track completeion time for emails

Hi I work in a large company that is installing metric reporting for our
teams. We receive about 50 emails daily and are trying to find a way to track
the time it take to complete each email from start to finish. Is there an
easier way to do this than to scroll through each thread to see when it
started and when it finished?
We categorize each email by product name upion completion but if there is
another folder we can make to find out when the 1st email was sent to when
our final response was sent that would be ideal!
