how to set software which opens email jpeg attachments

Outlook (2000) has switched to using Powerpoint to try and open jpegs etc
sent as email attachments without any prompt from me. This won't work. How
do I return to the orginal situation which worked flawlessly for seven years?

Save a jpg to the desktop.
Right click the jpg and go to properties.
Change the file association there.
