How to restrict local users access

I have a home computer with several users and I prefer that each limited user
cannot view folders harddrive. I think the less you can see in each user
account the better.

Any suggestions on how to work this local user restriction would be greatly
appreciated.

You need to set the GPO for all local user as follow:
Open a Run Command and type in:
gpedit.msc click [OK]
On the Group Policy there assign permissions as you want those users to have
access or prohibit them from certain activities or access to Services and so
on.

Please tell me if i should go into the security settings to make these
changes. It seems though that these changes will affect the admin of the
computer.

What settings and how it will effect the Admin if you will just apply on the
limited accounts not on the Admin?.
If you loged as admin and select these users or the actions you want to
implement on them that will not affect the admin. you can write down the
changes you made and then test the security by logging as those users and see
if the policy is working as designed, if not then reverse the changes.
If you are unsure write back with exact what happening.
