How to record and create an audio file to CD

How do you record an audio file for more than 60 seconds? I was able to
record my voice using the Sound Recorder feature but only for a minute or so.
I need to be able to record for at least 3 hours. (I plan to create an audio
book) Do I need some other software?
 
You can rerecorded over a longer file in Sound Recorder. To make a longer file use the edit and paste menu to keep pasting in 60 secs of audio. However for 180 minutes I'd look elsewhere.
