How to modify default association of files and programs

I am using metapad instead of notepad.

I am using crazy browser instead of ie6.0.2900.2135

But, my winxpsp2 keeps on opening some files with notepad, and
some other files win ie. For these two programs it doesn't even
ask "open with."

How do I tell it to open the files with my chosen program?

Or use the Folder Options applet, File Types tab.
