How to insert Signature in Outlook

I am using Outlook 2003.
Within Mail Format I am able to setup more than one signature.
When I compose an email, my default signature comes up.
I am trying to figure out how to change it to the 2nd signature when needed.
If I click Insert Signature, the 2nd signature does not appear for me to
select.
Any ideas what I am missing?

Try right clicking on the default signature in your message. This should
bring up a list of all the signatures that you have created. You can click
on the one you want to select.
