How to get started with Table of Contents

I have been given a document that has lots of cutting and pasting added to it
and has many fonts. The request is for me to format and add table of
contents. I have been reading help but have never done anything with TOC. Do
I start new document or edit the one I have? I'm using word 2003 Where do I
get started???
