I remember in outlook 2003 I can edit html messages I received into plain
text message to reduce disk space but still keep a record of the email.

Is this feature available in outlook 2007? Can't seem to find it.

See the Actions ribbon, then Other Actions, Edit Message. Then Options,
Plain Text.

Thank you.

Even though the ribbon is supposed to be more user friendly, I find that
many commands are hard to find compared to the office 2003 type interface. I
hope the 2010 office will bring back the non ribbon interface.

Outlook 2010 uses the ribbon as well. It is unlikely the menu interface will
ever come back. This site may help you:
