How do you turn off auto update of date field

I am using XP prof. I am unable to open up a document without the date field
of the letter head automatically updating to the current date. I am not the
original creator of these documents and they were created at a previous date.
This creates a problem because I need the documents contents to remain in
their original form. How do I turn this feature off and protect the content
of documents when I don't know the originator's formating use.

You are using a DATE or TIME field rather than a CREATEDATE field. This
field should be put in the original template if possible (instead of
inserting using the keyboard shortcut or header/footer toolbar button).

In the document in question, press Alt-F9 to display field codes. Then
change the field to a CREATEDATE field, press F9 and then Alt-F9.
