How to turn off automatic document date feature

When I open a Word document from an email attachment or saved document, the
"date" automatically updates to the current date. How do I turn off this
feature so the original date the document was created or written will appear?

Replace the DATE field with a CREATEDATE field. Right-click the date, choose
Toggle Field Code, change the word inside the field, and then right-click and
choose Update Field.

you just replace the date with original date.
and right click the date and you edit. after this choice update.
Finished..same instruction like Jay said
