How do you delete a weeks worth of e-mails in outlook

I have many e-mails from several weeks back and wanted to know how to delete
an entire week. When I highlite all the e-mails and click delete, a line
just appears through each one and they just stay in the column.

That's how IMAP works. You need to Purge the delete-selected items.
