If you just want to add buttons for things that aren't on the ribbon,
or that are in the wrong place for your purposes, you can use the
Quick Access Toolbar. Click the down arrow at the right end of the QAT
and choose Customize. Note that there's an entire category at the
bottom of the list for Commands Not in the Ribbon.

Also, before you decide something isn't on the ribbon, check the help
topic in the What's New section titled "Reference: Locations of Word
2003 commands in Word 2007". You may find that the buttons you want
have been moved to someplace you wouldn't think to look.

If you really want to customize the ribbon, read the articles in
Patrick Schmid's blog at http://pschmid.net/blog/category/ribbonx.
