How do you change the way a recipent of an emails name is displayed in an
email? I want to only show "John Doe" and not "John Doe (Email):<John
(e-mail address removed)>"

In the TO: or CC: box on top of every email that you want to send out. I use
Outlook 2000.

Go to the contact, and on that particular contact in the DISPLAY AS field,
remove the email address, and leave JUST the name...

You'll also need to post your mail support mode then. Only Corporate
Workgroup mode allows access to the Email Display As field by double
clicking in the Email field in the Contact Record.
