I want this feature in the Reading Pane, "Extra Line Breaks in this message
were removed", off for just one email folder I've set up - can I selectively
turn it off on one folder? And if not, how can I turn it off completely?

No for just one folder. The global option is under Tools | Options | Prefs.
tab | Email options. I think it is the 3rd or 4th checkbox from the top.

Outlook 2003 - I see how to turn it off for all emails (thanks to the reply
from neo) but can I do this for just one folder?
