how do i turn outlook off?

my outlook is continualy accepting e mails even when not double clicked.
envelope appears in toolbar, but never goes even when i double click on
outlook to read message. also my back up system cannot back up outlook as it
is always swiched on. how can i switch it off, or revert to previous outlook
where i send or receive to get messages when i choose? any help appreciated.
