How do I set up 1and1.com as my smtp outgoing mail server in Micro

I was able to successfully set up my incoming mail (pop.1and1.com), however I
thought I knew how to set up my outgoing mail as smtp.1and1.com but that did
not work. Do you know if my format is wrong or what the correct setup should
be?

That should do it for you.

If they use cPanel you have the ability to download an automatic
configuration file within the control panel and that works well. I think
they use a custom build though so that's probably not an option.

Chances are, your local ISP will block any attempt to use port 25 of
smtp.1and1.com, so be sure to use the alternate port 587.
